Leaving the rankings aside--as no explanation seems to be given for them--there's not even much discussion of what foods/cuisines might be on interest is a state.
The only useful comment on Indiana food is the mention of one restaurant (admittedly a good one) which (a) is very expensive and (b) does not accept reservations. The combination of those two characteristics is why I don't know anyone who has eaten there anything like regularly.

I would be OK with that list if Louisiana and California traded places.
