Not in the same league historically, but the Buckhorn Saloon and Museum in San Antonio is well worth a visit, touristy kitsch included!

Been there more than once. The first time I went, it was still downtown.

I've been to McSorley's - went to college just down the street when they were starting the protests because women weren't admitted. (Yes, I'm old.)

Also Lafitte's in New Orleans.
